I wanted to share with you as I start a four week purge of gluten from my diet. Some of the symptoms with Dr. Hyman talks about on this video I am experiencing. Since being diagnosed with Parkinson's disease I have been trying to eliminate anything that could exacerbate any symptoms that I'm having. I hope you find this video helpful.

Chef Scott Conant's Tomato Basil Sauce w/A Twist From Bianca the Foodie
For those of you who know me and for those that are new to the blog I should explain that I am obsessed with Chef Scott Conant's famous Tomato Basil Sauce for pasta. My "twist" video will come AFTER you watch Chef Scott's YouTube video.
In order to save on carbs I make this delicious sauce, but use a product called "Konjac" (see related post)
Which has no calories, gluten, sugar, or anything else except that it's high in fiber!

Wild Halibut with Honey Glazed Carrots and Parsnips on a bed of Brown Rice – Bianca The Foodie Cooks
I love wild halibut and find it quite easy to prepare.
When I'm on vacation I tried to use the freshest ingredients but I also want to ease and so my side dishes are from Trader Joe's. The honey glazed carrots and parsnips as well as the organic brown rice are perfect complements for the lovely piece of halibut that we cooked.
Thank you to our friend Gary for going fishing every year in sharing his catch with us so that we can eat wild halibut as well as wild salmon all year long!

Hot Curry Garbanzos Served Over Brown Rice - Bianca The Foodie Cooks
- 2 cans of Trader Joe's Organic Garbanzo Bean
- 2 Shallots finely chopped
- 3 Garlic Cloves finely chopped
- Penzey's Hot Curry Powder - Salt Free
- Hot Pepper Flakes
- Fine Sea Salt
- Trader Joe's Organic Brown Rice (frozen section)
- heat a frying pan and pour a tablespoon of canola oil in heated pan
- sauté the shallots and garlic until translucent. Make sure you do not burn as the garlic will become bitter.
- add the Penzey's Hot Curry Seasoning to taste ( I use about 1 tablespoon for two cans of garbanzo beans), a sprinkling of the hot pepper flakes again to taste. I want the seasonings to "cook" before adding the garbanzo beans. You will notice that the seasonings, the shallots, the garlic and the oil will become a paste.
- at the garbanzo beans stir into the shallot and garlic seasoning paste and then salt to taste. (Remember not to use too much salt!)
- serve over brown rice.

The Winners of 2011 SOBEWFF Burger Bash Talk to Bianca the Foodie
Before they knew they had won, we talked to both "Chopped" Judge Chef Marc Murphy and Iron Chef Michael Symon.
Chef Marc was the winner of 'Judges Award'!
Chef Symon took home The "Best-Dressed Burger" for his "shasha" sauce topping, a hot mustard sauce with hungarian peppers. And for a 2nd year in a row, Chef Symon took home the much coveted "People's Choice Award".

In Their Own Words: Bianca the Foodie Presents Her 2011 SOBE Wine & Food Festival's FIU MVPs
When I first met the six FIU students that had graciously volunteered to assist me during the 2011 South Beach Wine and Food Festival, we took a candid picture together!
At the end of my time with them, I wanted to capture on film their impressions of not only the Festival, but of working with someone that has Parkinson's disease (PD). As you know my goal is to inspire and encourage my fellow PDers to live life fully and that includes traveling and attending events such as SOBEWFF!

Wylie Dufresne's Interview at SOBE Wine & Food Festival's Best of the Best
Something wonderful happened in the process that I was not expecting. While interviewing the chefs, I met people that have personally been impacted by a PD diagnosis as well.
